Bright Dilly Feta Red Skin Potato Salad

5 Red Skin Potatoes cooked, cooled and chopped

1/2 c. Minced Chives

1/4 c. Minced Dill

4-5 cloves Garlic minced

1/4 c. Red wine vinegar

1/4 c. Brightland Awake Olive Oil

Fresh Cracked Pepper and Pink Himalayan Salt to taste

1/4-1/2 c. Crumbled Feta


Combine all ingredients in a bowl, and if you are like me, will combine with your hands, too, and wash them after!

Taste to see if you desire a little more fresh cracked pepper and salt and give one more toss. The flavors soak in fast, so there is no need to wait for this to be bursting with flavor, it’s ready! Serve immediately or chill for later noshing! Serves 4-6.
