Here's my Incredible Chorizo Burger Recipe that is loaded with antioxidant amazingness and bursting flavor to get your inner and outer glow elevated! It features Chinese Rose Radish Sprouts, a favorite I grow year round and highly recommend growing and incorporating them into your daily food rituals for an incredible antioxidant blast of vitamins A, C, E, and K!
This serves 4 juicy fab Chorizo Burgers!
Incredible Chorizo Burger
*Prep in this order for everything to come out at the same time.
Roasted Sweet Potatoes:
4 sweet potatoes cut up in little sticks
Sea Salt and Pepper to taste (1 tsp each or more)
Drizzled Brightland Awake Olive Oil
*Massage the sweet potatoes well with hands and roast at 375 for about 18-20 min, flipping half way through to cook them evenly, for roasted and crisped perfection!
The Slaw:
1/4 of a small red cabbage shredded
Season with sea salt and pepper to taste (about a half tsp each or more)
Grab a large handful of cilantro, wash it, pat dry, and chop with 4 minced cloves of garlic
Juice of 1 lime
1 1/2 Tbsp Mayo
1 Tbsp Maple Syrup
Drizzle of Brightland Awake Olive Oil
*Mix with a fork in a bowl and set aside.
For the Chorizo Burger mix:
1 lb. Ground Beef, and 1/4 lb. Beef Chorizo, season with sea salt and black pepper (half tsp each or more), mix with a fork first, and then with hands, to incorporate evenly. Form into four patties.
Heat 1-2 Tbsp Brightland Awake Olive Oil in a cast iron skillet on med-high heat. Place burgers in the preheated pan and smash down with a cast iron press. Wait a few minutes before flipping, making sure edges are crisped before flipping. Layer a slice of Monterey Jack Cheese on each while it cooks for about a minute more before transferring to a plate.
Toast Buns in pan for 20-30 seconds. Smear buns with smashed Avocado. Sea Salt and Pepper Avocado on both buns. Lay the burger on it, then on the other bun, lay sweet potato fries, rose radish sprouts, and slaw. You can also add a fried egg on top, that's the way my family requests!
