Most of you know my love of Turmeric, and that I cook with it all the time. It’s a delish superfood for your body and your complexion!
Anti inflammatory, helps with dark circles, and even helps firm.
I have paired it with some other beloved anti inflammatory, healing and detoxing powerhouse ingredients: ginger, garlic, kale, cucumber and raw honey.
This is one of my all time fav recipes I have ever made with Kale and Turmeric and hope you love it as much as I do. Nom nom this tonight!
Sunshine Kale Salad
1 1/2 tsp. Turmeric
1 Fresh Squeezed Lime
1 tsp. Minced Garlic
1 tsp. Minced Ginger
2 Tbsp. Soy Sauce
2 Tbsp. Raw Honey
Fresh cracked Red Pepper Flakes
1 Tbsp. Grape seed Oil
1/4 Plain Yogurt Whisk this together and put aside.
Crush 1/4 cup of roasted peanuts with a mallet and put aside.
Slice up 1/4 cucumber in little sticks.
Hand tear cilantro leaves.
Chop 2 bunches of Kale and remove the stem/ribs.
Now pour dressing over Kale and massage really well into leaves.
Toss the cucumber, cilantro, and peanuts in. You can eat the salad like this or add in your favorite protein. I added in sliced grilled coriander chicken after it’s cooled. Here is my Coriander Chicken recipe below:
Coriander Grilled Chicken
4 Chicken Breasts
1/4 C Balsamic Vinegar
3 Tbsp. Olive Oil
1/4 C Soy Sauce
1 Tbsp. Coriander ground
1 Tbsp. Cracked Red Pepper Flakes
A little Salt and Lots of pepper.
Marinate 20 ish minutes and grill for about 10-11 minutes.
